Guacamole
- 3 ripe avocados
- 1 tbsp. lime juice 15 mL
- 1 large tomato, chopped
- 1 large onion, chopped
- 4 green onions, chopped
- 1 sweet green pepper, chopped
- 4 garlic cloves, minced
- 4 small fresh hot chilies, finely chopped
- 1⁄4 cup chopped parsley or cilantro 60 mL
- 1 cup sour cream 250 mL
- 1⁄8 tsp. ground cumin 0.5 mL
- 1⁄4 tsp. Tabasco sauce 1 mL
Directions
- Mash avocados thoroughly with a fork. Add lime juice and mix well. Add remaining ingredients, mix well, cover and chill. Serve as an appetizer with tortilla chips or use as an ingredient in or a garnish for main dishes.
- Makes about 3 cups (750 mL). Note: Ripe avocados should be soft when squeezed and the outside skin almost black in color.
- Variation: For a colorful and tasty appetizer, serve Guacamole- Stuffed Cherry Tomatoes. Using a sharp knife, cut cherry tomatoes in half crosswise, scoop out seeds and place upside down on a paper towel to drain for about 20 minutes.
- Gently spoon guacamole into tomato halves. Sprinkle with bacon bits, fresh parsley or finely chopped green onion as garnish before serving.
